Corn Bread Cookies with Honey Butter Frosting

Ingredients

For the Cookies:

  • 1 (13.5 oz) box @bobsredmill Golden Cornbread Mix

  • 1 tablespoon granulated sugar
    ⅛ teaspoon salt

  • 4 tablespoons unsalted butter, melted

  • 1 ½ tablespoons water

  • 2 large egg yolks, room temperature

  • 1 teaspoon vanilla extract

For the Honey Buttercream Frosting:

  • 1 ½ cups powdered sugar

  • 2 tablespoons unsalted butter, melted

  • 1 tablespoon honey

  • 1 tablespoon milk, room temperature (buttermilk recommended)

  • ¼ teaspoon salt

Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with a silicone baking mat or parchment paper.
In a medium-sized bowl, whisk together the cornbread mix, sugar, and salt.

2. Add the melted butter, water, egg yolks, and vanilla extract. Use a hand mixer to combine until a dough forms.
Use a cookie scoop to portion out 12 dough balls and place them on the prepared baking sheet.

3. Bake for 8–12 minutes or until the edges are lightly golden.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.

Honey Buttercream Frosting

4. In a medium bowl, mix the powdered sugar, melted butter, honey, milk, and salt using a hand mixer until smooth and creamy.

5. Frost the cooled cookies generously. For extra sweetness, drizzle with additional honey if desired.
