Ingredients
7 tablespoons unsalted butter
9 cups mini marshmallows, divided (about 1 ½ (10-ounce) bags)
1/2 teaspoon vanilla extract
1/4 teaspoon kosher or sea salt
6 cups Rice Krispies or another crispy rice cereal
Instructions
Prepare the Pan: Line an 8×8-inch baking pan with parchment paper and lightly mist the parchment with nonstick cooking spray. Set aside.
Brown the Butter: In a large saucepan or Dutch oven set over medium heat, add the 7 tablespoons of unsalted butter.
Stir frequently as the butter melts, foams, and then develops golden brown flecks, releasing a nutty aroma. This should take about 4-5 minutes. If the butter is browning too quickly, reduce the heat to medium-low.
Melt the Marshmallows: Once the butter is browned, reduce the heat to its lowest setting.
Stir in about 7 cups of the mini marshmallows using a wooden spoon or rubber spatula. Mix gently until the marshmallows are melted and the mixture is mostly smooth.
Turn off the heat and stir in the vanilla extract and salt.
Combine with Cereal: Add the Rice Krispies cereal to the melted marshmallow mixture and fold gently until the cereal is evenly coated.
Carefully stir in the remaining 2 cups of marshmallows.
Press into the Pan: Scrape the mixture into the prepared baking pan. Using a rubber spatula or a piece of parchment paper, gently spread it into an even layer.
Press lightly to set in the pan, but avoid packing it too tightly.
Set and Slice: Let the treats set at room temperature for about 1 hour before slicing and serving.
