Deliciously Moist Chocolate Layer Cake
This rich and indulgent double chocolate cake is made with a moist chocolate base and a decadent chocolate frosting, perfect for any chocolate lover.
Ingredients:
For the Cake:
2 cups all-purpose flour
1⅓ cups granulated sugar
1 cup brown sugar, packed
1 cup cocoa powder
2½ tsp baking soda
2 tsp baking powder
1 tsp salt
1¼ cups buttermilk, room temperature
¾ cup coffee, room temperature
⅔ cup vegetable oil
3 large eggs, room temperature
1 tbsp vanilla extract
For the Chocolate Frosting:
2 cups unsalted butter, room temperature
2 cups powdered sugar
1 cup cocoa powder
½ tsp salt
2 cups chocolate chips, melted
¼ cup honey
¼ cup heavy cream
1 tsp vanilla extract
Instructions
For the Cake:
Preheat to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking soda, baking powder, and salt. Set aside.
In another bowl, whisk together the buttermilk, coffee, oil, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix just until combined. Avoid overmixing to keep the cake light and fluffy.
Divide the batter evenly between the prepared cake pans. Tap the pans gently on the countertop to release any air bubbles. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, carefully remove the cakes from the pans and transfer them to wire racks to cool completely.
For the Chocolate Frosting:
In a large bowl, beat the room temperature butter until light and fluffy. Gradually add in the powdered sugar, cocoa powder, and salt, mixing on low speed until combined.
Melt the chocolate chips in the microwave in 30-second intervals, stirring in between until smooth.
To the butter mixture, add the melted chocolate, honey, heavy cream, and vanilla extract. Beat on medium speed until smooth and fluffy.
Assemble the Cake:
Place one cooled cake layer on a serving plate. Spread a generous amount of frosting over the top.
Place the second cake layer on top and spread a layer of frosting on top.
Add the final cake layer and frost the top and sides of the cake with the remaining frosting, smoothing it out for a clean finish.
