  • ½ cup butter, softened (113g)

  • 1 cup granulated sugar (200g)

  • 1 large egg, room temperature

  • 1 egg yolk, room temperature

  • 2 teaspoons pure vanilla extract

  • 1 ½ cups all-purpose flour, spooned and leveled (190g)

  • ½ cup Dutch-processed cocoa powder (40g)

  • ½ teaspoon baking soda

  • 100g chocolate, chopped finely

  • ¼ cup Reese’s peanut butter cups (70g)

  • Maldon flakey sea salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

  2. Cream the butter and sugar: In a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.

  3. Add the eggs: Scrape down the sides of the bowl. Add the egg and mix on medium speed for 20 seconds, then add the egg yolk and mix until combined.

  4. Mix in wet ingredients: Add the vanilla extract and salted caramel sauce. Mix on low speed until fully incorporated.

  5. Combine dry ingredients: Sift in the flour, cocoa powder, baking soda, and salt. Mix until just combined—do not overmix. Add the chopped chocolate and peanut butter cups.

  6. Form cookie dough balls: Use a 3-tablespoon cookie scoop to form 12 evenly sized cookie dough balls. Place them on the prepared baking sheets and gently flatten them to just over ½ inch in thickness.

  7. Bake the cookies: Bake for 8-9 minutes. The cookies should look slightly underbaked in the center—they will firm up as they cool.
